Using a PCR-sequencing genetic identification method, in AZTI we are able to identify beyond any doubt the different fish species in fresh, frozen and even processed fish products (preserves, surimis, etc.).
In just 24 hours, with our method accredited by ENAC, we authenticate tuna canned under the “white tuna” and “light tuna” name and we also detect mixtures of yellowfin and bigeye.
