Innovating with coffee: decaffeinated coffee with linden flower and lemon balm
Diversifying product offerings, strengthening market position, and meeting consumer needs
Café Fortaleza and AZTI – a collaborative centre in the search for innovative products – have developed a pioneering product in the global coffee sector: decaffeinated coffee with linden flower and lemon balm which provides the functional benefits of these natural components, while conserving the organoleptic properties of the coffee, mainly aroma, flavour and original roast.
The decaffeinated coffee with linden flower and lemon balm was developed at AZTI’s instrumental and sensory analysis laboratories by selecting the most suitable linden flower and lemon balm extracts based on active content and precisely calculating the proportions for the final product; the relaxing effect that was aimed for was obtained, creating a product with optimal sensory qualities for the consumers.

Among the main benefits that this novel food product can offer are its undoubted benefits to the consumers’ health, as the product produces a relaxing effect when it is ingested while the taste properties of the coffee, essentially its flavour and aroma, are preserved.
Innovation that opens up markets
Café Fortaleza has taken a step further in diversifying its product offerings thanks to this project, gaining a foothold in the growing market for foods with improved nutritional profiles and meeting the new demands of consumers.
