Phages (or bacteriophages) are natural viruses capable of infecting specific bacteria, and they are gaining prominence as an effective solution to some of the sector’s major challenges, such as food safety, reducing antibiotic use, and combating antimicrobial resistance. In this context, the report provides a comprehensive overview of their potential, exploring their application across the entire agri-food chain, from primary production (agriculture, livestock farming, and aquaculture) to food processing, preservation, and packaging.

The document also addresses key aspects for industrial implementation, including technical, regulatory, and market-related factors, as well as specific examples of projects in which AZTI is actively involved. In this way, it positions itself as a valuable reference resource both for industry professionals and for organisations interested in incorporating innovative phage-based solutions.

With this publication, we reinforce our commitment to useful science, focused on knowledge transfer and aligned with the principles of the One Health approach, contributing to the development of safer, more sustainable, and more resilient food systems.
