The start-up YUIT aimed to develop a new generation of complete foods in powder form, designed to deliver balanced, practical and healthy nutrition adapted to today’s fast-paced lifestyles. The challenge was to create plant-based products with a complete nutritional profile and an appealing sensory experience, capable of positioning themselves as a real alternative to traditional meals.
In collaboration with YUIT, AZTI led an end-to-end food innovation process, from formulation to sensory validation.
The work focused on:
Designing and optimising the nutritional profile to meet daily requirements for macronutrients, vitamins and minerals.
Selecting 100% plant-based ingredients, ensuring naturalness, sustainability and nutritional balance.
Improving organoleptic properties (taste, texture and aroma) to guarantee a pleasant experience and high consumer acceptance.
Developing seven product references ready for immediate consumption after mixing with water.
The result: a line of powdered drinks that combines convenience, health and sustainability under the concept of “real food”.
