Tuna nuggets: a healthy, gluten-free and nutritionally balanced alternative

The challenge

Echebastar, through its Alakrana brand, aimed to expand its seafood portfolio with an innovative and healthy product. The goal was to develop a convenient and appealing format aligned with new consumer trends, while preserving the full nutritional value of tuna and eliminating gluten from the formulation.

The solution

In collaboration with AZTI, an innovative tuna nugget recipe was designed and validated, combining high protein content, low saturated fat levels and a completely gluten-free formulation.

The development focused on:

  • Selecting high-quality raw materials and optimising processing to preserve the nutritional properties of tuna.

  • Reformulating texture and coating, replacing conventional ingredients with gluten-free alternatives that maintain juiciness and flavour.

  • Balancing the nutritional profile to deliver a healthy option both for consumers with gluten intolerance and for those seeking more balanced and sustainable food choices.
