The challenge
Echebastar, through its Alakrana brand, aimed to expand its seafood portfolio with an innovative and healthy product. The goal was to develop a convenient and appealing format aligned with new consumer trends, while preserving the full nutritional value of tuna and eliminating gluten from the formulation.
The solution
In collaboration with AZTI, an innovative tuna nugget recipe was designed and validated, combining high protein content, low saturated fat levels and a completely gluten-free formulation.
