Genetic traceability to protect the authenticity of Idiazabal cheese

The challenge

The Idiazabal Protected Designation of Origin (PDO) needed a genetic methodology to ensure that the milk used in its cheeses comes exclusively from Latxa and/or Carranzana sheep.

The main technical challenge was to identify genetic markers unique to these breeds, in order to develop a DNA analysis technique applicable to both milk samples and finished cheese.

The solution

AZTI designed an innovative DNA analysis methodology that accurately verifies whether the milk used in cheese production comes exclusively from Latxa and/or Carranzana sheep, or whether it has been mixed with milk from other breeds.

The technique is valid and applicable to both raw milk and finished cheese.

The results

  • Genetic identification that enables rigorous controls in both milk and finished cheeses, providing an effective verification tool for the Idiazabal PDO.

  • The methodology has been validated and officially accredited by ENAC in accordance with ISO 17025.
