Degree in Food Science and Technology and Nutritionist by the Basque Country University. Since 2009, she works in the Food Research Division of AZTI as Junior Researcher. She has been involved in R&D&I national and international projects focused on the design and transfer to the food industry of new food products from laboratory to industrial scale-up. Experience in the design and development of food products with health and nutrition claims according to European Regulation, (low salt and fat sauces, source of fiber and omega3 dairy products) or high organoleptic quality products with new textures, less additives” clean label”, using novel processing technologies such as High Hydrostatic Pressure and aerated food using aerosol packaging technology. She also collaborates with haute cuisine chefs in new courses design, as well as transferring culinary skills and knowledge to food technology applications.
