New report by Baking Europe in collaboration with Fedima"},"content":{"rendered":"<section class=\"wpb-content-wrapper\"><p>[vc_row][vc_column][vc_column_text]<a href=\"https:\/\/bakingeurope.com\/index.html\" target=\"_blank\" rel=\"noopener\">Baking Europe<\/a> has just published The European Baking Ingredients Market Report 2022 (EBIM Report), in official association with<a href=\"https:\/\/www.fedima.org\/\" target=\"_blank\" rel=\"noopener\"> Fedima<\/a>, the European trade association representing the bakery, patisserie and confectionery ingredients manufacturers.<\/p>\n<p>This high-status, industry-specific report incorporates the Fedima Annual Industry Update which is designed to unite the regulators and industry leaders influencing and instituting change across the sector, creating a central source of practical reference material.<\/p>\n<p>The first volume is for manufacturing heads and focuses on some very important technical challenges facing the baking ingredients industry. Among the very interesting pieces, we find a special report on \u201csmart farming\u201d from <a href=\"https:\/\/www.agroscope.admin.ch\/agroscope\/en\/home.html\" target=\"_blank\" rel=\"noopener\">Agroscope Research<\/a>.<a href=\"https:\/\/www.cirad.fr\/\" target=\"_blank\" rel=\"noopener\"> CIRAD<\/a> explores neglected and under-utilised crops such as quinoa in gluten-free. Also, with protein-rich foods very much in the crosshairs of discerning consumers, <a href=\"https:\/\/www.azti.es\/en\/\" target=\"_blank\" rel=\"noopener\">AZTI<\/a> shares its research on <a href=\"https:\/\/www.azti.es\/aztinnova\/noticia\/valorizacion-de-subproductos-de-naranja\/\" target=\"_blank\" rel=\"noopener\">alternative proteins<\/a> and their respective properties when used in food products. <a href=\"https:\/\/www.actiononsalt.org.uk\/\" target=\"_blank\" rel=\"noopener\">Action on Salt<\/a> considers the measures needed to reduce our salt consumption and who should have the responsibility for implementing them.<\/p>\n<p>Other topics of interest addressed in Volume 1 are healthy snacks (by <a href=\"https:\/\/www.k-state.edu\/\" target=\"_blank\" rel=\"noopener\">Kansas State University<\/a>), high-welfare meat (<a href=\"https:\/\/www.ciwf.org.uk\/\" target=\"_blank\" rel=\"noopener\">CWIF<\/a> \u2013 Compassion in World Farming), waste trade and incineration in Europe (by <a href=\"https:\/\/zerowasteeurope.eu\/\" target=\"_blank\" rel=\"noopener\">Waste Zero Europe<\/a>), trends on finger food (by <a href=\"https:\/\/www.ox.ac.uk\/\" target=\"_blank\" rel=\"noopener\">Oxford University<\/a>).<\/p>\n<p>The main theme in Volume 2 this year focuses on the need for responsible sourcing of ingredients and the difficulties to maintain supply chain integrity whilst encouraging innovation.
