The technology centre AZTI is participating in a project to develop and validate a technology-based sensor system for objectively classifying fish freshness.
This study is funded by the Ministry of Agriculture, Food and Environment and the European Maritime and Fisheries Fund, and is coordinated by the National Federation of Provincial Fish and Frozen Product Retail Entrepreneurs (FEDEPESCA).
The project is performed in collaboration with Rula de Aviles, Asturias main market, a pioneer in the implementation of quality systems.
The ultimate goal of the project is the development and validation of a technology that enables the objective categorization of hake first sale freshness, which would reduce the subjectivity of human sensory evaluation and increase the confidence of all stakeholders.
It has been selected hake as target product because it is the most traded fish in Spain, and particularly in Rula. AZTI will be responsible for developing such sensor system solution.
The project will last 18 months, and a final day for result presentation has been scheduled, in which a video showing the process developed will be available.
AZTI stresses that this initiative has an “absolutely innovative” character, given that until now neither an objective system nor any technology had been integrated to help with the categorization of hake first sale.
