PhD in Chemistry from the University of the Basque Country (Spain) after working on the development of new analytical methods for the determination of contaminants in food. Since 2004 his research work at AZTI has been focused on the development of biosensors and chemical sensors for food safety and quality, participating in several European and National projects. He has 26 peer-review publications dealing with the optimization of new methods for the determination of contaminants and natural products in food and boasts a solid expertise in biosensors, chromatography, analysis of residues in food and methods validation.

In 2008, he began working as a laboratory technician in the AZTI Microbiology Laboratory. He works in accordance with standard UNE-EN ISO/IEC 17025.
Analysis through pathogen research techniques using traditional methods and RT-PCR. He works with microbial count methods. Calibration and verification of equipment as per ISO 17025. He is qualified to work in level 2 and level 3 biosafety conditions.

Técnico Superior en Salud Ambiental , ha trabajado como técnico de laboratorio realizando análisis de aguas residuales en el laboratorio de medio ambiente y análisis mediante microbiología clásica y mediante RT-PCR de alimentos en el laboratorio de microbiología. Auditora de calidad de la AEAZN y SGF realizando auditorias de calidad e higiene en el sector de zumos, en materia prima, producto final e instalaciones. En el laboratorio físico-químico ha realizado análisis de clorofenoles y cloroanisoles en Bodegas y materias auxiliares, metales pesados por absorción atómica mediante generador de hidruros, llama y cámara de grafito, acreditado por ENAC. Análisis de histamina, ocratoxina en vino, kathon y triclosan en jabones, vitamina A y E mediante HPLC , así como analíticas de capacidad antioxidante mediante el método DPPH . Calibración de equipos cumplimiento de criterios de acreditación de ENAC y Validación de métodos; cálculo de incertidumbre según requisitos de la Norma ISO-17.025

Elisa Jiménez (PhD) is a Senior Researcher at AZTI-Tecnalia Food Research Division since 2008. She holds a PhD in Molecular Biology from the University of the Basque Country (Spain). Her expertise focuses on the development of molecular biology based detection systems, as well as DNA microarrays. She has been involved in several European and National Projects related to the development of food authenticity and safety control methods. She is coauthor of fourteen research publications in international peer-reviewed journals and three patents related to genotyping analysis. Her work at AZTI-Tecnalia is currently focused on the development, validation and application of DNA-based analytical methods applied to food authentication and traceability, as well as aptamer-based detection systems for food safety.

Amaia Lasagabaster, Ph.D. in Food Science and Technology. She has been involved in several European and RTD projects for some public administrations and private companies on the impact of emerging processing technologies on microbial inactivation. Her research field in AZTI is mainly focused on the assessment of the applicability of these novel technologies (such as pulsed light) as stabilization, preservation and/or disinfection/decontamination processes in order to improve the quality, safety and technological properties of different foodstuffs. She has published 7 articles in international peer-reviewed journals and participated in more than 20 international and national congresses.

Experience:
PhD in Food Science and Technology, specialized on development, validation and application of analytical methods for the characterization and testing of biomolecules: allergens/proteins, DNA and spoilage microorganisms in foods (Biomagnetic separation, ELISA, flow cytometry-FACS, phage display, antibody production and conjugation, etc).
She is currently involved in the study of the impact of novel technologies in food, mainly focused in two fields: Impact in allergen detection (IgG), allergenicity (IgE, human sera) and structure, and the effect of emerging technologies in other proteins (including enzymes) and microbial reduction (spores and pathogens).
She also works in the development of new food products and concepts (e.g. new textures) through novel processing technologies (High Pressure Processing, Pressure assisted thermal sterilization, High pressure homogenization).

MSc in Biological Sciences (University of Parma, Italy); PhD in Food Biotechnology (University of Bologna, Italy), boasts over 20 years of research experience in molecular biology and molecular toxicology both in Academia and Industrial Research Institutes worldwide. She has published more than 30 research articles in international journals and 4 books chapters in the field of Food Biotechnology and Food Safety.
Her main research interest are currently directed to studying the toxic effects of food contaminants focussing on heavy metals, organic contaminants and nanoparticles mainly using a toxicogenomic approach and the zebrafish animal model. She is currently participating in two European projects ( ECsafeSEAFOOD http://www.ecsafeseafood.eu/ and the LIFE Project FITOVID) as well as in several national and regional projects studying the toxic effects of food contaminants and their mixture.
