1st Communication
Dear friends,
Following a series of preliminary meetings between chefs and scientists interested in Gastronomy and Food Science and, latterly, with international publishers, we are now in the process of launching a new journal: The International Journal of Gastronomy and Food Science, with Elsevier as publisher.
The objective of the journal is to fill the gap between these expanding fields, using a scientific approach. As such, it is envisaged that the journal will contain scientific papers, review articles and notes on a whole range of overlapping topics, food taste and flavour, culinary processes, global trends (lifestyles, healthy eating), nutrition, food service/management,…
Structured in the similar way to other journals, International Journal of Gastronomy and Food Science will have an Editorial Board which members will act as reviewers of papers, in association with other expert referees, to maintain high international editorial standards.
Knowing your area of expertise, we would like to invite you and your colleagues to send contributions to this journal, presenting your work in the form of scientific papers or review articles, to the General Editors.
If you find this invitation attractive, we would like to know which type of contribution you are aiming at (scientific paper or review), the area of interest, possible title and date for presentation of the work (April’09; June’09; Sept’09; Dec’09).
