Thanks to the temperature and humidity controlled conservation chambers, at AZTI-Tecnalia we can simulate the conditions of the commercialisation chain to study changes in the conservation of foods and ensure products reach the end consumer in the best condition possible.

All kinds of fresh and processed foods, pasteurised, sterilised, frozen, etc., both packaged and non-packed, must comply with the strictest quality standards when they reach the market.

There are various applications for a strict control of temperature, humidity and conservation time:

  • Conservation studies at constant and fluctuating temperatures.
  • Accelerated ageing studies.
  • Optimisation of storage conditions.
  • Study of the influence of temperature and the effect of breaking the cold chain on food shelf life.
  • Simulation of the conditions of the commercialisation chain.
  • Preparation and conditioning of edible films.

To achieve optimum control in these studies, AZTI-Tecnalia’s climate controlled chambers (which provide a total volume of over 60m3) comply with the following specifications:
  • Temperature range: -20ºC to 50ºC.
  • Relative humidity control: 10-98%.
  • Temperature ramp programmes with minimal time intervals.
