The development of new foods through the application of new technologies

By developing and validating new technologies and processes, AZTI-Tecnalia gives companies in the food industry the opportunity to design and develop new food products with characteristics that are difficult to obtain through the application of traditional technologies and/or processes. We can intervene in the development of new food products bearing in mind the possible impact of such treatments on their physical/chemical (e.g. microstructure), nutritional, health-related and organoleptical characteristics.

  • Development of new food products through the application of new technologies or processes: high-pressure equipment (static and dynamic), CSD, packaging systems, edible coatings and/or films, immobilisation processes, polymer technology, etc.
