The food industry is constantly searching for and identifying the needs and demands of the consumer, as only in this way can it survive in an evermore competitive market. Within this process, sensorial analysis has proved to be an essential tool.

Sensorial analysis is a science that focuses mainly on studies of the perception, feeling and reaction of the consumer to the characteristics of the products, including the acceptation or rejection of them.

AZTI-Tecnalia has, in the consumer, one of its principal work tools and thereby has an ongoing expansion of its database, the goal being to achieve the greatest number of end users and, consequently, obtaining the maximum possible range of sociodemographic profiles.

With the success obtained in the current campaign of tasters - involving some 300 consumers, AZTI-Tecnalia is committed to growth and to encouraging all those interested to participate in their sensorial analyses.

A heartfelt thanks to all those taking part in the previous studies with consumers, without the help of which our targets would not have been achieved, given that our goal is "designing new foods, taking the opinion of the consumer as pivotal".
